Approximately seven pounds of water are created by burning a single gallon of gasoline. It has to go somewhere.

Yes you do. 7 lbs of H2O to the gallon of gas to be precise.

I think you're misunderstanding what I am talking about.

The moisture collects in the muffler itself as condensation. I am not referring to actual water out of the exhaust. The muffler is essentially a tin can. When you're in a humid climate such as Georgia, you get condensation collecting inside the muffler when the truck has sat over night. The weep hole is there on the lowest point of the muffler to allow the moisture to escape so that it did not sit there and rust the muffler from the inside out.

Catalytic converter has nothing to do with this process.

When the engine is running, and the muffler get's hot enough all the condensation and moisture evaporates out of the tail pipe/drips out. The weep hole is more of an extra preventative measure to increase the life of the muffler. Having one though, sounds like an exhaust leak...because it essentially is.

A cat has nothing to do with the generation of water. Keeping things simple burning gasoline in pure oxygen produces CO2, water, and heat
    C8H18 + 12.5 O2 → 8 CO2 + 9 H2O + heat

This is completely independent of any H2O in the air. So, the water seen dripping from your tail pipe was gasoline in your tank only seconds before.
