Is it possible to start the truck with the valet key if you have the push button smart key system?

You take the metal key out of the fob which allows access to the glove compartment and give the valet the fob.

    No.

Only the fob starts the truck.

Unless you own a 2016 or 2017, that key is useless. Throw it in your safe with the spare fob and forget about it. Prior to 2017 it used to be the "tailgate key," but eventually Toyota figured that its smarter to key the tailgate with the same pattern as the drivers door.

There is no sub key with smart key systems. You cannot start with the metal key.

Very helpful response to OP's post.
While I avoid valet parking to an extreme, every now & then one may be forced to use it.

From what I understand, the metal key opens the glove box. That makes the fob a valet key if the metal key is removed, as the truck can be opened, started and driven, but the glovebox cannot be opened. Please explain how that does not make a Fob without the metal key equivalent to a valet key.

Are you concerned about if the fob dies? I believe the solution to that is to hold the fob up to the button and it'll start following the normal procedure. The truck will let you know well in advance if the batteries in the fob need replacing. I drove with my truck saying the fob was low for about 3 months before remembering to replace the batteries. It never failed to start as normal.

The 2020+ via remote connect have a guest driver and valet mode. The app will notify you if parameters are exceeded like speed, miles driven, distance from your location - it will also display a message on the center console so the valet knows you were notified of them screwing around with it.

I think were hung up on terminology here.

The Tacoma is supposed to come with a total of three keys.
Two of them are either smart fobs or ignition keys:

    upload_2021-5-26_9-22-15.jpg

    upload_2021-5-26_9-21-49.jpg

And one of them is a dummy key.

    images_fc6bac969b8b909f26d6089adcdb51dab6dea226.jpg

Now when I said the "valet" key is useless, I meant that the dummy key is useless if you own a truck made after 2017. It is keyed exactly the same as the insert key of your fob, with the exception of the model years that I mentioned. And yes, when you valet, always remove the insert key. And no, neither the insert key nor dummy key will start the truck.

I hope that makes it clear as mud. :D

i don't want to give it to a valet...it is just what Toyota calls(or called) it. My interest is if I go say tubing I can't take the key fob with me. I thought that maybe the valet key would be a solution to that but apparently it is basically useless....

Here is the workaround. Hold down the lock button and push the unlock twice. This disables your fob. Leave the fob hidden in your center console, lock the drivers door with your key. Go toob.

Alternatively, stop by a scuba shop and pick up a waterproof pouch for keeping it.

After 14+ years with my '06 TRD OR and now in a '21 TRD OR there are changes in technology that I'm not liking.
We just have to adapt and find work-arounds.
In your example, I'd just lock the fob and stash it in a hide-a-key box somewhere on my truck, keeping the skinny metal key in my pocket.
It's not what I'm accustomed to, but it'll have to work.
