I've had the Guild Outfitters harness installed in my truck with an OEM 4Runner outlet for close to a year and a half, and it's been great. It basically just adds another plug to the OEM inverter wiring with a plug and play harness (so I'm assuming it won't work if your truck doesn't have an inverter already) which turns on with the same button as the bed outlet.

I put my plug on the back of the center console to help with charging devices sitting in the back seat and give back seat passengers a charging option (dremel tool to cut a hole in the plastic and then JB Weld to secure the outlet in place) but you really can put it wherever you can fit it.

I suggest changing your thread title to something like “Thoughts on interior 120V AC outlet” as there is already some interior 12V and 5V DC outlets.
