I was looking at 2020's on one my local dealership's websites and looking at a barcelona red TRD off road model for fun.

Since when is there an S.O.S button for help?

That's Toyota Safety Connect (Basically Toyota's OnStar). It's been in the Toyota/Lexus fleet since '09 but the Tacoma got it new in 2020.

I keep forgetting that is up there in my truck. I imagine if I need it, I will probably not even think of it as an option.

I don’t like what that sticker says... at the end it also might say: “to disable press vehicles SOS button.”?!??

You literally just press the button, a call center rep asks how they can help and you ask to opt out of connected services. Very low threat for a red "S.O.S." button.

Looking at upgrading to a 2020 in the very near future and would love to have this functionality physically removed all together.

It's not that simple. You can only deactivate it, but the connected services are integrated with the ECU, so there's no way to completely remove it.

Yeah, it is phased it to vehicles at random it seems. The newer GX series lexus' have had it for a while I think. It started in the car lines and worked its way to the suv/truck segment.

Dang it, now I want to push the button! If I'm driving late in the night, want to talk to someone and all the HAM bands are quiet, can I chat with a Toyota call center associate?

it will automatically alert authorities in a crash without needing to push the button

"For Safety Connect subscribers, if the SRS airbags deploy or in the event of a severe rear-end collision, the system is designed to send an emergency call to the response center, notifying them of the vehicle’s location (without needing to push the “SOS” button) and an agent will attempt to speak with the occupants to ascertain the level of emergency and assistance required. If the occupants are unable to communicate, the agent automatically treats the call as an emergency and helps to dispatch the necessary emergency services. (→P. 72) "

It can come in handy if your vehicle is stolen too

This a permanent thing or a trial like the wifi trial. Remote starting from phone is nice but once trial is over so is that.
