Get a hitch extender that can raise up to the height of the roof of cab and then use a roof rack to secure the front

So I don't surf but I carry 10' surf rods on the roof w/ a snowboard rack. I'm sure there's a surfboard rack too.

Get a short board. Jk (well not really) but if you must the hb lifeguards use 3rd gen Tacomas and they use ladder racks

I have a sunroof on my truck so I’m hoping to carry it without a roof rack. Might have to look into the ladder racks though.

My kayaks are 12 and 14 feet. The 12 foot weighs 110 lbs empty. I plan to get a hitch mount tailgate extender. No way I'd want to try and put it on the roof

Dropping the tailgate and strapping it down will fix your problem. Otherwise you need a rack.
