I know the cool thing now is 17 inch or 18 inch, but the cost of tires $$$$$. I have searched and don't see many so i'm wondering if there are problems? I plan on putting on Bilstein 5100 set at 1.75 and a 1.5 AAL in rear. Would 16x10 or 16x9 cause any issues? I like the wide look, but not ridiculous 12 inch wide or more. I don't offroad much. This is my daily driver. I could do 16x8 with wheel spacers, but most people recommend not to.

What tire size do you desire? How much are you willing to cut?

If you look at the recommended rim width range via BFG the 275 sized tire is meant for a wheel between 7-8.5" wide. 10" would really stretch the tire.
If you really want to do a 16x10" you'll need to look into doing more lift, running a 305 tire which would be a small stretch onto a 10" wide wheel. The 305/70-16 fits up to 9.5", going to 10" wouldn't be as bad.

Or go with the SCS F5 with 3.5" back spacing. It'll really push the wheel out and safe for your tires at 8" wide.
You can get the look you want with an 8" wheel and no wheel spacers by opting for a wheel with a lower offset (lower back spacing).

Fierce Attitude 265/75/16's on ATX AX195's 9" -12 offset and 4.53 backspace, stock suspension for now. I get a little occasional rub in a "magic spot" when going over inclines/declines while turning. Lift should cure that.
