Does anyone know how to remove the seemingly flat headed bolt connecting the hood latch and support bracket?

If you are referring to the round thing just below and to the left of the spring in your first picture - that is a plastic cover over a 10MM hex bolt. Remove plastic cover with small flat blade screwdriver or pick.

lol I realized that last night. I went at it with a flat head for a little and it finally popped off to reveal the 10mil.
