    That’s usually what I get with that mix +fixings.

    First time using pork belly in meatballs. I’m expecting a large fat loss during cook, but a greater return in catering inquiries. Fat = flavor.

    This is our hand out and parents are always excited to stop by. Spend a little, cover costs, eat happy.

    I will DEFINITELY have to prep batches. I haven’t figured that out yet :)

    Yes. I was able to get them cheaper if I did a bigger order. Last time I did 200 lbs.

    I buy busted bags at Rural King of the LumberJack pellets for $5.00 (20lb bags). I just made a haul, three 20lb bags, mostly full and two others that were over 50% full for under $20.00.

    Three trays of 80 .5 oz meatballs prepped (5 lbs.). I’ve got another 8 lbs. of mixture bagged and ready for departure. The remaining 11 lbs. of unseasoned 50/50 mix will get the same treatment in the coming days.

    Two hours of work to get here, maybe 30 minutes of work rolling the remaining mixed meat. 2 additional hours of mixing/rolling for the 11 lbs. in the freezer.

    Did my first pork shoulder ever. Came out absolutely stellar. Prep was simple, I slathered it in yellow mustard and then covered it with some kosher salt, paprika, and a rub called Honey Killer Bee. Let it ride in the smoker for about 10 hours on 190, then cranked it to 230 for the last 3. Let it sit for a few hours to come down in temp, then pulled it. So damn good!
    I have a small smoker, the green mountain grills Davy Crockett and used mesquite pellets.

    Mini meatball bar for Halloween trick-or-treaters. Do something like this every year and the parents/kids love it!

    You know I completely forgot about Rural King. I need to see if there is one around me here in GA, I know we didn't have one close in MI.

    Just looked, closet one in like 90 miles away in bama.

    One of those red carts from Harbor Freight fits 2 buckets underneath, and a tabletop smoker on top.
    If I didn't have the tabletop, I'd probably make the top into a prep surface or storage for smoker/grill tools anyway, and still keep the two buckets underneath.

    A bag fills a bucket nicely.
