Being totally honest I haven't found a huge difference in MPG going between and E and a C load tire, 53 pounds vs 45 pounds.
Do you go in the backcountry much? Or is it 100 percent pavement ?
looking at your posts it looks like your pretty much on pavement, I would go with a lighter tire then, no need for more protection.

I have had E KOs and now run C's, still avg around 17 MPG. Dosen't really matter what I do. That being said if you want maximum MPG then the lighter tire is the way to go.
The AT3 look way meatier in person in an E load, nice looking tire.

E load is way overkill for a 100% street driven Tacoma (unless you tow or haul a lot of weight)...but on the plus side you most likely won't have to worry about punctures or flats at all.

The load range E tire is 10 ply rated, it does not have 10 ply construction. It is rated the same as a bias 10 ply tire. The load range rating is capable of supporting more load at maximum air inflation (80 psi) than the p metric tire. It won't be more puncture resilient than the p metric tire and it might not ride as good. It won't hurt anything to run them just set the air pressure to whatever the door placard says.
You should see a lot of miles on the E range tires.
I have the E range tires on my 2002 and they aren't too bad considering the typical road noise that my BRG KOS have.

They are likely to have a lot of miles on them before they wear out and need to be replaced

Been running E rated tires a long time. 80 k on the last set and they still have tread left. Do they weigh more, sure; but there nothing like a little peace of mind knowing there is a tire down there with a little more beef.
And the roads where I drive are much more likely to flatten a tire than any trails off road I've ever been. People pick up after themselves on the trail, but I've never seen someone pull over on the freeway and pick up all the construction debris full of nails and screws they just let blow out of their trailer. E load rated tires are truck tires. P rated tires are for cars. The MPG loss is negligible.
