Building a new off-road camper trailer... rear galley/storage or no?

I also asked this on TNTTT (Teardrops and Tiny Travel Trailers), but I think the crowd there is more the established campgrounds for multiple days type and unaware of how well a truck can be set up, so I might get better relatable responses here.

I'm designing another squaredrop offroad camper trailer. My current one is a 5x8 and we found it's just a little small. We would like more interior room, interior storage for things like clothes, games, etc., and we found we really don't use the rear galley as a cook area and instead take everything out and set up on a table (mainly because of lack of accessibility since it has to be raised to allow interior foot room underneath). So this next trailer I have been planning a 5x10 to allow for more room inside with storage ability, but I'm torn on having a rear galley.

The taco will built for trips even without the trailer. I'm building a GoFast style wedge camper cap with a slide out kitchen and plenty of storage. Fridge will be on a platform on the back seat, dry food in Alubox style containers, blah blah. Really the only reason I am still going to build a trailer is A) the wife sleeps better with hard walls and lockable doors, and B) when we are staying in one area for longer than a day we can leave the trailer in place to hold the site or location while we are away hiking or whatever else.

My thoughts are not adding a galley and instead use that exterior wall space for a full sized spare, water heater, wall storage, etc. I could use the inside rear wall and build a cabinet thats roughly 12" off the floor, and beneath that have slide out battery storage or mechanical storage thats accessible from the outside. Or not do anything in the rear, and since that frees up a lot of space another 5x8 might be plenty and I can keep trailer size and weight down.

Those with no galley or rear storage, do you wish you had it?

Those with a rear galley or storage area but have most everything in the truck, do you still find you use the galley area?

I do not have a trailer like what you are building but have owned travel trailers in the past. Here’s my thoughts. Even the larger 5x10 is a bit small to use valuable space for a cooking area. As long as you can comfortably cook and prepare meals outside then that’s the way to go. If you cook outside you need an awning or some kind of canopy to protect you from the rain or snow. I’d use the back wall area for storage (which you need all you can get with a small trailer). What I would do is design a hinged shelf on the back wall that I could fold down , set a camp stove on and a few other things, and do some cooking or meal preparation if weather, wind, rain, snow got too severe to cook outside. I much prefer to cook outside than inside anyway. Just my 2 cents worth.

I am building an off road capable cargo trailer toy hauler/camper. My thoughts are that because my trailer is 6×10 my sq/ft are valuable. I estimate how much I will actually use the desired object in time to the percentage of real-estate it requires. If there is an alternative solution I way that into the equation. I find this gives me a realistic look at what I need and what I can afford......
This seems to help me make better choices.

If you already have a slide out kitchen in the taco, I see no reason to also have one in the trailer. I’d have a few things in the trailer so if someone stays at camp they can still cook but otherwise I’d use that space for something else.

Some great points…I love my awning and the outdoor kitchen…but the added tongue weight is a consideration. I am considering moving the fridge/freezer to the truck and building a sink with storage in its place. We have an induction cook top for use during extreme weather, it runs off our EcoFlow Delta solar generator.
