2017 SR5. Looking to install an HDMI port after I remove OEM head unit and replace it. Will I be access this poverty button from behind when I the head unit out? Or, will I need to take more of the dash off?

I believe that Meso Customs has a video that shows how to change that panel out because they make (or used to) a replacement panel that has a bunch more slots.

Just remove the head unit, < 1 min work.

Is there enough room for me to reach my hand down in there and get to the back of the switch though?

Found this video about redoing the switch panel holy crap

Pops right out from front of bezel.

the climate cluster is easy to remove so you could do it from backside.

or if you’re extra lazy you can drill a hole in the middle and pop it out with a flathead screwdriver

Yes. It's a little tight but you should easily be able to reach in and pop it out. I have done it a couple of times, once to add a second USB and once to add a switch for driving lights.
