I have a Rad Runner Gen2 from Rad Power Bikes.
I swapped in the 35a controller and LCD8H display as well as the true 750w motor. This was a little bit of an in-depth process as Rad Power does not like you modding their bikes and does pretty much everything the opposite from everyone else. This meant completely rebuilding the rear wheel onto the new motor as the disk brake is opposite, the drive is opposite and the wiring is the opposite from Rad to Bafang. You also have to run a 6(?) speed freewheel as the alignment is off if you run a single speed freewheel. It's not an issue once you mount it and just adjust/bend the rear derailer to run the chain on the proper gear. Haven't had a single issue with skipping since install.
Lighting I also went aftermarket, and wired a 2x LED 12v headlight directly into the battery. If you plug into Rad Power's harness you will burn up the PCB that controls the stock light. Trust me, I toasted mine.
C9 seat on the Suntour NCX post. This is a game changer for comfort.
Fooker MTB pedals. Vast improvement over stock.
I plan on adding front suspension.

Ive been looking into one for in-town use, though...
Something like the radrunner that can carry a passenger. Or manage a good amount of groceries.

There are some great bikes out there, cool to be able to ride and pickup groceries.
For riding in the mountains or gravel grinding all the major brands have good bikes. As a cyclist you always pedal at your fitness rate, the E bike just means you climb that trail a bit faster, or maintain a higher speed into a headwind, your still pushing watts, getting your heart rate up.
Class 1 throttle aren’t allowed in National/state/provincial parks and lots of designated riding areas Maintained by riding clubs.
Some days I like going no e assist, other days it’s e bike time.
