I have a question. I have a Traeger that I cook my steaks with using a reverse sear. I'm thinking about bringing some steaks with me camping so my plan is to pull the steaks off after the low temp smoking (leaving my grill at home and not finishing with the sear). I'm wondering if anyone has done this and just pulled cold smoked steaks out at camp and just heated and did final sear then?

Never tried that. I take a Coleman Road trip grill with us camping so grilling on cast iron grates. I just do the traditional sear then reduce temps. Love my Traeger but have never tried what you are asking

Cast iron grates sounds like a good set-up. I love my Traeger smoked steaks too....moreso than a lot of steakhouses. I just have concerns trying to get my cold smoked steak heated and seared without shooting past my desired temp (rare to med rare).

at camp, I'll just have a propane grill and a cast iron skillet...I won't have my Traeger. I'm thinking taking the steaks out of the cooler and let rest maybe 20 mins...hopefully they'll warm up a few degrees. Cook on skillet at low temp maybe 6 mins per side...remove steak from skillet turn up heat for sear then sear another 2 or 3 mins per side. I'll have to experiment with this before my big trip in July.

ive thought about something similar with a sous vide. i dont see why it wouldnt work. youre essentially adding grill marks with the reverse sear since smoking it actually cooks the steak

Your idea will work, it sounds great! I'll try it out too. Steaks on the smoker are hard to beat.

Have you checked out the bbq smoker thread on TW? It's a good one
