My A/C starts up and runs for awhile and when I stop somewhere and turn the engine back on, it's stopped working, or I'll be driving on the" freeway" in Hawaii where it's hot as f&#@k, it just kicks in and Feeling Aloha again.

gosh.. where do I start, 18x9’s on 275-65 ridge grapplers. Bilsteins, clazzio leather, audio consists of stereo integrity, fosgate power amps, sundown audio, hybrid audio. Plus more...
Sounds like the connector of wiring is getting hot behind the ac panel. Mine started a little fire and burned a lil bit of the connector

does it work only on high? if so it may be the blower motor resistor
does it make sounds when turned on? if so it could be the blower motor brushes need to be cleaned or just change the whole blower

will post links when i find the correct ones

Weathertech floor liners moded to hold OEM floor mats, weathertech vent visors, Toyota bed mat, LEER 100XL cap, hood gasket mod to stop whistling.
Grab your blower resistor connector (which is just above the passengers leg in the duct) and wiggle it when it's in the no go state and see if it starts. Those connectors get loose connections and melt, common issue. You will unplug it and see brown burn stains.

It can not be the resistor if it is intermittent. A blown resistor block will only allow current to pass through on the highest blower motor speed. This issue he is explaining sounds like a wiring issue, do tacoma's have self-resetting breakers/fuses? Could be the wiring heating up and opening the circuit, then when it cools down the circuit closes. If no self-resetting fuses/breakers then:

-Do you have all four blower motor speeds working?
-Open your hood and turn on the AC. Check the compressor to see if the clutch is enabling.
-Check the connections at the compressor. (Failure sure sounds like wiring to me).

May be just a tad low on refrigerant. Check with gauges, what are the numbers, and what is the ambient temp?

Maybe I'm misunderstanding the post because it's written kinda bro-ish.
Is it the fan that stops or is it the cool air that stops?
If it's the cool air that stops blowing randomly then you may be leaking refrigerant.
There is also a flap that opens and closes when you put the recirculate on/off. Sometimes that flap gets stuck open or closed and when you hit a bump in the road it opens(If stuck closed) allowing a rush of "aloha" (cold air)
