I’m about to buy suspension and I can save like 200 bucks doing the 5100 over the 5160. I don’t hardcore offroad, just weekends. I mostly highway drive. Will there be a difference?

There will be a difference. Question is will you notice it or need it, and is the difference worth $200 to you.
5160 has almost 1" longer stroke than 5100, with almost same compressed length. Are you lifting the rear? Do you need an extra inch of droop travel? You may want B110's instead for less cost than 5160's.
5160 has a remote reservoir. Do you need a remote reservoir?
Both are digressive self-adjusting valved shocks.
Sounds like you would benefit from contacting @Wheeler's Off-Road Inc or @HeadStrong Off-Road to get the best set up for your needs/budget.

no I’m not planning on lifting the rear at all. Just want to raise the front by an inch so it’s level. What is different between B110 and 5100 rears?

B110 is longer, for lifted rear. It also has a longer compressed length, so if you aren't lifting the rear, you don't want them because you will lose uptravel.
Peep this for info about reservoirs, to help decide if you need them:

After watching a few suspension videos I would get the reservoirs if you plan on any sort of washboard roads or long gravel road stretches (30mins plus).

Lots of highway driving. I offroad like 1/100 of the time. Just want something more comfortable than sport shocks that will knock your head off your shoulders

Looking at buying 6112/5160 setup with Deaver springs myself. Have you got anywhere with inventory searching? Where is the best place to source these things right now?

Big fat tires with a mild tread pattern will ride the best. Shocks the 5100s rode rough imho. I bought the eibach coilovers hopefully they ride better.

FWIW, the 5100 and 5160 are valved the same. So ride would be the same. The difference is the reservoir on the 5160 that is there for cooling. If you aren't going to be doing any high speed off roading, just get the 5100. Infact, there is a member that had the 6112's and went through a handful of different rear shocks to try and match the performance of the 6112, he ended up with the Bilstein 8100 ($1000 EA rear shock). I personally went 6112 front and 5100 B110 rear. I also have Dakar med leaf pack. It rides better than 3rd gen trd OR suspension before it, but I never expected it to ride like a $10k baja suspension so I think my expectations were pretty spot on with the results.

I just bought 6112/5160s because they were the only thing i could find. Would have went 5100 if i could find some rear ones. Its whatever. I'll let you guys know how they end up. To be honest, I just want anything better than the sport suspension. I do a lot of highway driving with washboard old raods and it is BRUTAL. Anything is better!

Ya, the sport suspension is pretty stiff. You'll notice quite a positive difference going from the sports progressive damping to the Bilstein's digressive damping as well.
