'The knife to use for perfectly slicing beef or cutting fruits and vegetables. The granton edge creates pockets of air which prevent extra-thin or soft slices from sticking to the blade. The precision forged blade, bolster, and tang are permanently bonded to an ergonomic, moulded slip-resistant handle to provide a contemporary look. Wüsthof knives offer a harmonious blend of precision cutting performance, integrity of materials, safety, and comfort. The knife is hot-drop forged by hand from a single blank of high carbon no-stain steel, a specially alloyed surgical steel consisting of exacting proportions of carbon, chromium, molybdenum, and vanadium. The blade is perfectly tapered from bolster to tip, and from the back of the blade to the edge, and is honed by hand. Perfect balance is assured by an almost full extension of the tang through the length of the handle. Gapless bonding between the handle and the bolster prevents food particles from entering. Tough polypropylene handles with full, visible tangs and the traditional three rivets distinguish Classic knives from Wüsthof's other cutlery lines. Otherwise Classic knives are identical to other Wüsthof knives, embodying all the virtues that earn the German manufacturer world renown. The principal parts of a Wüsthof knife-- blade, bolster, and tang--are forged from a single piece of high-carbon stainless steel, and the blade is precisely tapered from bolster to tip and from back to hand-honed edge. Blades and beautifully formed bolsters are not as thick as some knives'. As a result, despite their heft, strength, and durability, Wüsthof knives are pleasingly delicate and marvelously balanced in action.
With its narrow blade, this 6-inch utility knife neatly slices lunch meat, cheese, vegetables, and large fruits as well as carves a roast, ham, or turkey into serving portions. Alternating hollows on each side of the blade create air pockets, allowing slices to fall away cleanly and permitting thinner slicing. Like all fine knives, it should be hand washed with the care a lifetime investment deserves. --Fred Brack

I chose this knife because I liked the profile of the blade. Most utility knives have a drop point and the blade is tapered on both sides. This one has a straight point and is only tapered on the bottom. I wasn't disappointed. It's a sturdy design and very versatile. The hollow edge makes slicing vegetables so much easier. I used it to slice a turkey breast and it made a very neat, quick job of it.
I like this knife so well, I will probably get the 8-inch version too. I wish that Wusthof made this same style knife in a 4-1/2" or 5" version.
This is a very useful and well made knife. I keep it sharp with the accompanying sharpener and wash it by hand. It is especially useful for slicing and chopping. Easy to handle with a comfortable heft. It has held up very well with years of use.
The scalloped sides don't really seem to have any benefit and the blade on this is more flexible that I would like. Also it would be more practical if the blade was a little deeper. My fingers tend to hit the chopping block about the same time the blade does.
I have a good collection of Wusthof knives. this one is light and easy to handle, and useful for a lot of different situations. I think after my chef's knife and paring knife, this is what I use the most.
